Fruit Puree
Fruit Puree is simply the fruit mash which is produced by milling (mechanical crushing) and fining the edible parts of fresh, clean, ripe and sound fruits after removal of the inedible parts like peels and stones. If some part of the natural water in the fruit puree is removed by evaporation, the product obtained is called fruit puree concentrate.

Production
Fruit puree production on industrial
scale starts with the transportation of the harvested fresh fruits
to the fruit puree production facility. Fruits which are collected
at the fruit puree production facility are first subjected to the
pre-washing stage where gravel, sand and similar foreign materials
are removed from the fresh fruits. After this stage; Rotten, mouldy
and unripe fruits are selected and removed on the sorting belt and
the second washing stage follows. After the second washing process,
the inedible parts of the fruits like stones, sticks and peels are
removed. After all these preparation stages of fruit puree
production; Selected fresh, clean, ripe and sound fruits are
transferred to the milling process where the intermediate product
called the fruit mash is obtained by the mechanical crushing
process in the mills. The fruit mash is then heated up to a certain
temperature and then directly transferred to the pulper where the
final product called the Fruit Puree is obtained. Most of the time,
fruit puree name is used for the concentrated fruit puree as well
by mentioning the brix value, so in order to avoid any confusion,
the term single strength fruit puree is the common name used in the
industry.

Concentrate
If required, fruit puree can be
concentrated by means of evaporation process and the product
obtained at the desired concentration after the evaporation process
is called Fruit Puree Concentrate. Fruit Puree or the Fruit Puree
Concentrate is then packed, through aseptic filling or cold
filling, into PE bags in metal or plastic drums, in bins or into
food tankers with specific volumes as per customer requirements and
then the packed fruit puree or the fruit puree concentrate is
transferred to the storage area.
Fruit Puree Applications
Fruit Puree and Fruit Puree Concentrate are mainly used as the raw material for the fruit juice industry, for the production of 100% fruit juices, fruit nectars, fruit drinks and also used in the production of jam, marmelade, ice cream, yoghurt and similar products.
